Preparation
- Heat a large skillet over medium heat. Brown the ground beef along with the diced onion until fully cooked and the onions are softened. Drain any excess grease.
- Stir in the taco seasoning and 1/4 cup of water, then reduce the heat to low and let it simmer for 3 to 5 minutes until thickened. Remove from heat.
Fry Tortillas
- In a separate skillet, heat the oil over medium-high heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Place them on a paper towel-lined plate to drain.
Assemble and Bake
- Preheat your oven to 400 degrees F (200 degrees C) and line a sheet pan with parchment paper.
- Assemble each pizza by spreading refried beans on one tortilla, adding the seasoned beef, and a sprinkle of cheese before topping it with another tortilla.
- Spread enchilada sauce over the second tortilla and sprinkle with additional cheese.
- Repeat this process to make six pizzas and place them on the prepared sheet pan.
- Bake for about 6 to 8 minutes, or until the cheese is melted and bubbly.
Serve
- Once out of the oven, top with chopped tomatoes and green onions, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in an oven or toaster oven for best results. Consider using a mixture of cheeses for extra flavor.
