For the Chicken
  • 4 large boneless skinless chicken breasts
  • 1 tsp chipotle powder
  • 1/2 tsp garlic powder
  • 2 tsp ground ginger
  • 1 1/2 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp ground sage
  • 1 tsp ground thyme
  • 2 eggs eggs For egg wash
  • 1/2 cup plain mayo
  • 2 tsp dry mustard powder
  • 2 tsp sriracha sauce
  • 2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 1/2 cups flour For breading
  • 2 tsp fine sea salt

  • 1/4 cup milk
  • 4 tbsp water
For the Potato Wedges
  • 3 lbs thick potato wedges You can either bake or fry them

Method
 

Preparation
  1. In a bowl, mix together the chipotle powder, garlic powder, ground ginger, onion powder, oregano, sage, thyme, black pepper, cayenne pepper, cumin, and sea salt.
  2. Coat the chicken breasts in the spice mixture, ensuring they are evenly covered.
  3. In another bowl, whisk together the eggs, mayo, mustard powder, sriracha, milk, and water until fully combined.
  4. Dip the seasoned chicken in the egg mixture, then coat it in flour for that delicious crunch.
Cooking
  1. In a large skillet, heat canola oil over medium-high heat.
  2. Fry the chicken until golden brown and cooked through, about 5-7 minutes per side.
  3. Meanwhile, bake or fry the thick potato wedges until crispy and golden.
Assembly
  1. Assemble the sandwich by placing the crispy chicken on a bun and adding your favorite toppings, serving the potato wedges on the side.
