Ingredients
  

For the zucchini sticks
  • 4 medium medium zucchini
  • 1 large egg
  • 1 cup marinara sauce
  • 1/4 cup all-purpose flour
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp kosher salt
  • 1 cup vegetable oil for frying
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp water

Method
 

Preparation
  1. Slice the zucchini into long, even sticks, about the size of traditional French fries.
  2. In a bowl, whisk together the egg and water until well combined.
  3. In another bowl, mix the flour, salt, and black pepper.
  4. Dip each zucchini stick first into the flour mixture, shaking off any excess, then into the egg mixture, allowing the excess to drip off, and finally coat with the breadcrumbs and Parmesan cheese.
Cooking
  1. Heat a generous amount of vegetable oil in a pan over medium heat. Ensure the oil is hot enough before adding zucchini sticks.
  2. Fry the zucchini sticks in batches until they are golden brown and crispy, about 3-4 minutes on each side.
  3. Remove the cooked zucchini sticks from the pan and drain on paper towels. Serve hot with marinara sauce for dipping.

Notes

For the best results, ensure your oil is hot before frying and do not overcrowd the pan. Experiment with different seasonings in your breadcrumbs for added flavor.
