  • 4 cups cooked chicken, shredded or cubed (cold) Use leftover rotisserie chicken for convenience.
  • 0.75 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 0.5 tsp salt Adjust to taste.
  • 0.25 tsp black pepper Adjust to taste.
  • 2 tbsp fresh dill, chopped
  • 1 cup red grapes, halved and patted dry
  • 0.5 cup celery, finely diced and dried
  • 0.25 cup green onions, sliced
  • 0.5 cup toasted pecans or slivered almonds Add just before serving for crunch.

Preparation
  1. Start by placing your completely cold shredded or cubed chicken in a large mixing bowl.
  2. In a separate bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, pepper, and chopped dill until the mixture is smooth.
  3. Add the halved grapes, diced celery, and green onions to the chicken bowl.
  4. Pour the dressing over the mixture and gently fold everything together until evenly coated.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld beautifully.
  6. Just before serving, fold in the toasted nuts to maintain their delightful crunch. Adjust seasoning with additional salt or lemon juice if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. To freeze, store the chicken mixture without dressing to maintain texture.
