Ingredients
  

Main ingredients
  • 2 pieces ciabatta rolls (sliced in half)
  • 2 tablespoons olive oil For brushing the bread
  • 1/4 cup basil pesto Use good-quality pesto for best flavor
  • 2-4 slices provolone cheese Can substitute with other types of cheese
  • 1/4 cup roasted red peppers
  • 1/4 pound deli turkey meat Adjust according to preference

Method
 

Preparation
  1. Preheat a panini grill over medium heat.
  2. Brush the outside of both pieces of bread with olive oil.
  3. Open the bread and spread a generous amount of pesto on the inside of both sides.
  4. Place 1-2 slices of cheese on the bottom piece, followed by 1/4 of the turkey.
  5. Add some roasted red peppers on top, and finish with the top part of the roll.
Cooking
  1. Place the sandwich on the panini grill and close the lid.
  2. Cook for about 5-7 minutes or until the cheese is melted and the sandwich is warm.
  3. Slice in half and enjoy your delicious creation!

Notes

For added crunch, consider including fresh spinach or arugula just before toasting. Store leftovers in an airtight container for up to three days in the refrigerator.
