  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced

  • 1/4 cup red onion, diced
  • 1 cup Italian dressing Can substitute with other dressings.
  • Salt and pepper to taste

Preparation
  1. Cook the cheese tortellini according to package instructions. Once done, drain the tortellini and let it cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, black olives, bell pepper, and red onion.
  3. Pour the Italian dressing over the salad and toss to coat all the ingredients evenly.
  4. Season with salt and pepper according to your taste preferences.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Before serving, garnish with Parmesan cheese.
