- Roll the tortillas tightly and place them seam side down in a baking dish.
- Pour the enchilada sauce evenly over the rolled tortillas and sprinkle any remaining cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.

Notes
Leftovers can be stored in an airtight container in the refrigerator for up to three days. For freezing, wrap assembled enchiritos tightly in plastic wrap and store in a freezer-safe container. Bake from frozen at 350°F (175°C) for an additional 10-15 minutes.
