Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned and cooked through. Make sure to drain any excess fat.
- Stir in the taco seasoning, refried beans, sliced black olives, and water. Cook until everything is heated through.
- Warm the tortillas in the microwave or on a skillet until they become pliable.
Assembly
- Spread a portion of the beef mixture onto each tortilla. Top each with some cheddar cheese and roll them up tightly.
- Place the rolled tortillas seam-side down in a baking dish.
- Generously pour the enchilada sauce over the top, and sprinkle on any remaining cheddar cheese.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Serve hot and enjoy your delicious homemade Enchiritos!
Notes
Add fresh toppings like diced tomatoes, shredded lettuce, or a dollop of sour cream. Great with a side of chips and guacamole.
