  • 1 lb Ground beef Use lean ground beef for a healthier option.
  • 1/2 cup Onion, chopped White or yellow onions work best.
  • 1 cup Refried beans Use vegetarian refried beans for a meat-free option.
  • 1 cup Black olives, sliced Optional, can be omitted if not preferred.
  • 1 oz Taco seasoning packet Adjust seasoning to taste.
  • 8 pieces Taco size flour tortillas, soft Corn tortillas can be used for gluten-free.
  • 2 cups Cheddar cheese, shredded Can substitute with Monterey Jack or pepper jack.
  • 1 28-ounce can Enchilada sauce Choose your favorite brand or homemade.
  • 3/4 cup Water Adjust as necessary to achieve desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned and cooked through. Make sure to drain any excess fat.
  3. Stir in the taco seasoning, refried beans, sliced black olives, and water. Cook until everything is heated through.
  4. Warm the tortillas in the microwave or on a skillet until they become pliable.
Assembly
  1. Spread a portion of the beef mixture onto each tortilla. Top each with some cheddar cheese and roll them up tightly.
  2. Place the rolled tortillas seam-side down in a baking dish.
  3. Generously pour the enchilada sauce over the top, and sprinkle on any remaining cheddar cheese.
  4. Cover the dish with foil and bake for 20 minutes.
  5. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  6. Serve hot and enjoy your delicious homemade Enchiritos!

Notes

Add fresh toppings like diced tomatoes, shredded lettuce, or a dollop of sour cream. Great with a side of chips and guacamole.
