String Bean Chicken Stir Fry

  • 1 pound chicken breast, sliced
  • 2 cups fresh green beans, trimmed
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce can substitute with gluten-free soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • to taste salt and pepper
  • 2 tablespoons vegetable oil

Method
 

Preparation
  1. In a bowl, combine the chicken slices with soy sauce, cornstarch, and a pinch of salt and pepper. Allow to marinate for about 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5 to 7 minutes until golden brown and cooked through.
  3. Add the minced ginger and garlic, stirring for an additional minute until fragrant.
  4. Toss in the fresh green beans and stir-fry for 3 to 4 minutes until they are tender yet still crisp.
  5. In a small bowl, mix the oyster sauce with a tablespoon of water and pour it over the chicken and green beans, stirring well to coat.
  6. Cook everything together for another minute or two. Adjust seasonings as desired.

Notes

Serve with steamed rice or fried rice and garnish with sesame seeds or chopped green onions. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days or frozen for up to 2 months.
