Ingredients

  • 2 pounds potatoes, diced Yukon Gold or red potatoes recommended.
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 pound cooked bacon, crumbled For a different taste, use crispy pancetta.
  • 1 cup shredded cheddar cheese Sharp cheddar is preferred.
  • 1/4 cup chopped green onions For garnish and flavor.

Method
 

Preparation
  1. Boil the diced potatoes in a pot of salted water until they’re tender, approximately 10-12 minutes.
  2. Drain the potatoes and let them cool slightly.
  3. In a large bowl, whisk together the sour cream, mayonnaise, Dijon mustard, garlic powder, and onion powder. Season with salt and pepper to taste.
Mixing
  1. Add the cooled potatoes to the bowl and gently stir until they are well coated with the creamy dressing.
  2. Fold in the crumbled bacon, shredded cheese, and chopped green onions until everything is evenly combined.
Chilling
  1. For the best flavor, chill the mixture in the refrigerator for at least one hour before serving.

Notes

Consider adding diced jalapeños for heat or swapping some sour cream for Greek yogurt for a lighter option. Be aware that freezing may alter the texture of the salad.
