  • 3 large Eggs

  • 1 tsp Vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together the flour, baking powder, and salt.
  3. In another large bowl, beat the sugar and eggs with a mixer until light and fluffy.
  4. Mix the lemon zest and juice along with the vegetable oil and vanilla extract into the sugar-egg mixture.
  5. Gradually add the dry ingredients to the wet mix, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack.
