Ingredients
  

For the loaf
  • 3 tbsp Lemon zest
  • 1/2 cup Lemon juice
  • 3 large Eggs
  • 1 3/4 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1 3/8 cups Granulated sugar
  • 1/2 tsp Lemon extract
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1/4 cup Vegetable oil
  • 1/4 cup Unsalted butter
  • 1/3 cup Full-fat Greek yogurt
  • 1/2 cup Whole milk
  • 1/4 cup Water
For the icing
  • 1 cup Powdered sugar
  • to taste Lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the sugar, eggs, lemon zest, and lemon juice until well combined.
  3. Add the vegetable oil, melted butter, Greek yogurt, whole milk, and vanilla extract. Mix thoroughly.
  4. In a separate bowl, whisk the flour, baking powder, salt, and lemon extract together.
  5. Gradually fold the dry ingredients into the wet mixture, stirring until just combined.
Baking
  1. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  2. Bake for about 50 to 60 minutes. A toothpick inserted into the center should come out clean.
  3. After baking, allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Icing and Serving
  1. Meanwhile, for the icing, combine the powdered sugar with a small amount of lemon juice until achieving your desired consistency, then drizzle over the cooled loaf.
  2. Slice and serve your delicious lemon loaf!

Notes

To keep your lemon loaf fresh, wrap it tightly in plastic wrap or store it in an airtight container. Can be stored at room temperature for about three days or refrigerated for up to a week. Freezing individual slices is an option too.
