Ingredients
  

For the filling
  • 1 cup fresh spinach, chopped Make sure to squeeze out excess moisture.
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened Low-fat can be used as a substitute.
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon garlic powder
  • to taste salt and pepper
For the wraps
  • 4 pieces spinach tortillas Feel free to use whole wheat or corn tortillas.
  • 1 tablespoon olive oil For cooking.

Method
 

Preparation
  1. In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, sun-dried tomatoes, garlic powder, salt, and pepper. Mix until well combined.
  2. Spread a generous amount of the mixture onto each spinach tortilla.
  3. Roll each tortilla tightly, ensuring the filling is secured inside.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Place the rolled tortillas in the skillet seam side down and cook for about 3-4 minutes on each side or until they are golden brown and crispy.
  3. Remove from the skillet, slice in half, and serve warm.

Notes

These wraps can be paired with a fresh side salad, roasted vegetables, or tzatziki for dipping. Store leftovers in an airtight container in the fridge for up to two days. Reheat in a skillet over low heat.
