Preparation
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Spray a skillet with cooking spray and set it over medium heat. Add the oil.
- Once the oil is warm, add the chopped spinach and sauté until it wilts.
- Mix in the sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper.
- Shake the egg white carton and pour it over the spinach mixture. Stir gently to combine, then cover and allow it to sit for a few minutes to form an egg patty.
Assembly and Baking
- Lay the lavash bread out and place the cooked egg patty in the center.
- Sprinkle with both the mozzarella and feta cheese.
- Roll up the wrap like a burrito, ensuring the bottom is sealed.
- Spray the outside of the burrito with cooking spray on both sides and place it on the prepared baking sheet.
- Bake for 5-10 minutes, flipping halfway through, until the wrap is crispy and golden.
- Cut in half and enjoy your homemade delight!
Notes
Best served with a fresh side salad or sliced fruit. For added protein, consider pairing it with Greek yogurt dip. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
