- Heat olive oil in a skillet over medium heat.
- Add chopped spinach to the skillet and cook until wilted. Season with salt and pepper.
- Remove the cooked spinach from the skillet and set aside.
- Place a tortilla in the skillet, sprinkle half with feta cheese, and top it with the sautéed spinach.
- Fold the tortilla in half and cook until golden brown on both sides (about 2-3 minutes per side).
- Repeat the process with the remaining tortillas and filling, adjusting heat as necessary.
- Once cooked, slice and serve warm.
Notes
These quesadillas can be enjoyed on their own or with salsa. For variations, add grilled chicken, goat cheese, jalapeños, or red pepper flakes.
