  • 2 cups fresh spinach, chopped Packed with vitamins A, C, and K.
  • 1 cup feta cheese, crumbled Provides a rich, creamy flavor.
  • 4 large tortillas Can use whole wheat or gluten-free.
  • 1 tablespoon olive oil Used for sautéing.
  • to taste Salt and pepper To season the dish.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped spinach to the skillet and cook until wilted. Season with salt and pepper.
  3. Remove the cooked spinach from the skillet and set aside.
  4. Place a tortilla in the skillet, sprinkle half with feta cheese, and top it with the sautéed spinach.
  5. Fold the tortilla in half and cook until golden brown on both sides (about 2-3 minutes per side).
  6. Repeat the process with the remaining tortillas and filling, adjusting heat as necessary.
  7. Once cooked, slice and serve warm.

Notes

These quesadillas can be enjoyed on their own or with salsa. For variations, add grilled chicken, goat cheese, jalapeños, or red pepper flakes.
