  • 1 lb frozen corn Fresh corn can be used when in season.
  • 1 piece jalapeño pepper, diced Remove seeds for a milder salsa.
  • 1/4 cup red onion, finely chopped
  • 1/3 cup cilantro, chopped
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1 tsp salt Adjust to taste.

Preparation
  1. In a mixing bowl, combine the frozen corn, diced jalapeño, chopped red onion, and cilantro.
  2. Squeeze in the lemon juice and lime juice.
  3. Add salt to taste and mix well.
  4. Let the salsa sit for 10 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature with tacos, burritos, or as a dip.

Notes

To keep your Spicy Corn Salsa fresh, store it in an airtight container in the refrigerator. It lasts about 3-5 days. You can freeze it and defrost it overnight in the fridge before serving. For added flavor, consider roasting the corn before adding it to the salsa.
