Ingredients
  

For the chicken and broth
  • 1 whole whole chicken or chicken thighs and breasts, boneless and skinless
  • 6 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
For the dumplings
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 1/2 cup butter, melted
  • to taste salt
  • to taste pepper
  • optional herbs (thyme or parsley)

Method
 

Preparation
  1. In a large pot, bring the chicken and broth to a boil with the diced carrots, celery, and onion. Simmer for about 30 minutes until the chicken is fully cooked.
  2. Remove the chicken from the pot and let it cool slightly before shredding it.
Dumpling Preparation
  1. In a separate bowl, combine the dumpling ingredients: flour, baking powder, milk, and melted butter. Mix until just combined; do not overmix to keep dumplings fluffy.
  2. Return the shredded chicken to the pot and bring the broth to a gentle boil.
  3. Drop spoonfuls of the dumpling mixture into the boiling broth. Cover the pot and let the dumplings steam for 15-20 minutes until fluffy.

Notes

Serve in a deep bowl with fresh herbs on top for presentation. This dish goes well with cornbread or a crisp garden salad. Store leftovers in an airtight container for up to 3 days, or freeze for later enjoyment.
