  • 3-4 pounds beef chuck roast
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

Method
 

Preparation and Cooking
  1. Season the beef chuck roast generously with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  3. Transfer the seared roast to the slow cooker.
  4. In the same skillet, add the chopped onion and minced garlic, cooking until softened.
  5. Add the carrots and potatoes around the roast in the slow cooker.
  6. Pour in the beef broth and Worcestershire sauce, then sprinkle the thyme, rosemary, and bay leaves on top.
  7. Cover and cook on low for 8 hours or until the meat is tender.
  8. Remove the bay leaves before serving.

Notes

For added flavor, consider adding balsamic vinegar or fresh herbs during the last hour of cooking. Adjust vegetables as per seasonality.
