Preparation and Cooking
- Season the beef chuck roast generously with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Transfer the seared roast to the slow cooker.
- In the same skillet, add the chopped onion and minced garlic, cooking until softened.
- Add the carrots and potatoes around the roast in the slow cooker.
- Pour in the beef broth and Worcestershire sauce, then sprinkle the thyme, rosemary, and bay leaves on top.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove the bay leaves before serving.
Notes
For added flavor, consider adding balsamic vinegar or fresh herbs during the last hour of cooking. Adjust vegetables as per seasonality.
