  • 5 cups chicken broth Can be substituted with vegetable broth for a vegetarian version.
  • 1/2 cup carrots, diced
  • 1 stalk celery, diced
  • 4 cloves garlic, minced
  • 1/2 yellow onion chopped
  • 3 oz baby spinach, fresh tightly packed Adds color and nutrients.
  • 1 tsp basil, dried
  • 1 leaf bay leaf
  • 1 tsp Italian seasoning
  • 1/4 tsp nutmeg, ground
  • Salt and pepper to taste Season to preference.
For the Final Touch
  • 1 (16 oz.) package potato gnocchi Adds a hearty component.
  • 1 cup heavy cream For creaminess; can use a plant-based alternative.

Preparation
  1. In your slow cooker, add the chicken breasts, chicken broth, diced carrots, celery, garlic, onion, dried basil, bay leaf, Italian seasoning, nutmeg, salt, and pepper.
  2. Cover the slow cooker and cook on low for 6-8 hours, or until the chicken is cooked through and tender.
  3. Once done, carefully remove the chicken and shred it using two forks before returning it to the slow cooker.
  4. Add the potato gnocchi and stir gently into the broth. Cook for an additional 30 minutes on high until the gnocchi are tender.
  5. Stir in the heavy cream and baby spinach just before serving for that creamy, vibrant finish.
Serving
  1. Serve hot with your favorite crusty bread for dipping.

Notes

This soup stores beautifully in an airtight container for up to three days in the fridge. For longer storage, it can be frozen for up to three months. When reheating, gently warm on the stove, adding a splash of broth or cream if it’s too thick.
