  • 3 to 4 pounds beef chuck roast Choose fresh, high-quality meat.
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1.5 cups beef broth Use gluten-free if necessary.
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 leaves bay leaves
  • 2 pounds small potatoes, quartered (optional) Add during the last hours of cooking.

Method
 

Preparation
  1. Season the beef roast generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the roast on all sides until deeply browned.
  3. Transfer the browned roast to the slow cooker.
  4. In the same skillet, add the chopped onion, carrots, celery, and minced garlic. Sauté the vegetables for about 5 minutes until they begin to soften.
  5. Pour the beef broth into the skillet, scraping up any browned bits from the bottom of the pan.
  6. Pour the broth and sautéed vegetables over the roast in the slow cooker.
  7. Add the dried thyme, remaining salt, black pepper, and bay leaves to the slow cooker.
Cooking
  1. Cover the slow cooker with its lid. Cook on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours, until the beef is very tender.
  2. If using potatoes, add them to the slow cooker during the last 2 to 3 hours of cooking on low, or during the last 1 to 1 and a half hours on high.
  3. Before serving, carefully remove and discard the bay leaves. Shred the tender beef with two forks.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to three months. Reheat with a splash of beef broth to maintain moisture.
