Ingredients

Main Ingredients
  • 2 cups Cooked chicken, shredded or cubed Can use rotisserie or boiled chicken.
  • 1/2 cup Mayonnaise For creaminess.
  • 1 tablespoon Dijon mustard For tanginess.
  • 1 cup Celery, finely chopped Adds crunch.
  • 1/4 cup Red onion, finely chopped Can substitute with green onions.
  • 1/4 cup Sweet pickle relish For sweetness.
  • to taste Salt and pepper Adjust according to preference.
  • 1/4 cup Slivered almonds (optional) For added crunch.
  • 1/4 cup Dried cranberries (optional) For sweetness.

Method

Preparation
  1. Start by preparing your chicken. If using rotisserie chicken, remove the skin and shred the meat into bite-sized pieces. If boiling, cook thoroughly and allow to cool before shredding.
  2. In a large mixing bowl, combine the shredded chicken, mayonnaise, and Dijon mustard. Mix until each piece is well-coated.
  3. Add the chopped celery, red onion, and sweet pickle relish to the bowl. Stir gently to combine.
  4. Season with salt and pepper to taste. If you're using slivered almonds and dried cranberries, fold them in delicately.
  5. Refrigerate the chicken salad for at least an hour before serving to let the flavors meld together.

Notes

For a richer flavor, consider adding a splash of lemon juice. Optional: Add cayenne pepper for heat or mix in crunchy veggies like bell peppers.
