Ingredients
  

For the Panini
  • 2 slices sourdough bread
  • 1/2 cup fresh mozzarella, sliced Use high-quality fresh mozzarella.
  • 1/2 cup roasted tomatoes Homemade roasted tomatoes enhance flavor.
  • to taste fresh basil leaves
  • to taste balsamic glaze
  • to taste olive oil For grilling the bread.
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat a panini press or skillet over medium heat.
  2. Drizzle olive oil on one side of each slice of bread.
  3. On the un-oiled side, layer the fresh mozzarella, roasted tomatoes, and basil leaves.
  4. Drizzle with balsamic glaze and sprinkle with salt and pepper.
  5. Top with the second slice of bread, ensuring the oiled side is facing up.
Cooking
  1. Grill in the panini press or skillet until the bread is golden brown and the cheese is melted, about 4-5 minutes per side.
  2. Once done, remove from heat, slice, and serve warm.

Notes

Pair with a simple salad, crunchy kettle chips, or tomato soup. Store leftovers wrapped tightly in plastic wrap or in an airtight container for up to three days in the fridge.
