  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, chicken broth, and half of the shredded cheese. Mix well, then season with salt and pepper to taste.
  3. Transfer the mixture into a greased baking dish and spread it evenly.
  4. In a separate bowl, mix the crushed Ritz crackers with the melted butter and sprinkle this mixture over the top of the casserole.
  5. Finish by topping it with the remaining shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Allow it to cool slightly before serving.

Notes

This casserole keeps well in the refrigerator for about 3-4 days. Store in an airtight container. For longer storage, freeze portions for 2-3 months for optimal flavor and texture. Tips for success include experimenting with different cheeses and adding herbs for flavor.
