  • 2 cups cooked rice Use day-old rice for best texture.
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn) Substitute based on availability.
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 2 eggs beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

Preparation
  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened and aromatic.
  3. Stir in the mixed vegetables and cook for another 2-3 minutes until they are tender.
  4. Push the vegetables to one side of the pan and pour the beaten eggs to the other side, scrambling them until fully cooked.
  5. Add the cooked rice to the skillet and mix everything together well.
  6. Pour the soy sauce over the rice, then season with salt and pepper. Stir to combine all the flavors.
  7. Cook for another few minutes until everything is heated through and well-mixed.
  8. Garnish with sliced green onions and serve hot.

Notes

Great for using up leftover ingredients. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to a month.
