Main Ingredients
  • 5 cups cooked chicken Use rotisserie chicken for added flavor.
  • 3/4 tsp garlic powder
  • 1 tbsp dried parsley
  • 2 cans cream of chicken soup
  • 1/2 tsp black pepper
  • 1 tbsp poppy seeds Do not skip, they elevate the dish.
  • 16 oz sour cream Greek yogurt can be used as a lighter substitute.
Topping
  • 2 cups Ritz crackers Crushed to create a crunchy topping.
  • 1/2 cup butter, melted
  • 3/4 cup Parmesan cheese Divided into two portions.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, garlic powder, parsley, cream of chicken soup, black pepper, poppy seeds, sour cream, and half of the Parmesan cheese. Mix well until all ingredients are fully incorporated.
  3. Pour the mixture into a greased baking dish, spreading it evenly.
  4. Crush the Ritz crackers and combine them with the melted butter. Sprinkle this mixture over the chicken layer to create a crunchy topping.
  5. Finally, sprinkle the remaining Parmesan cheese on top.
Baking
  1. Bake for 30 minutes, or until the dish is heated through and bubbly.

Notes

Poppy Seed Chicken can be served with steamed vegetables, over rice, or with simple sides like green beans.
