  • 1/2 lb cheese steak beef
  • 1 tsp garlic, minced
  • 1/2 cup green bell pepper, diced
  • 6 oz mushrooms, sliced
  • 1/2 cup onion, sliced
  • 1/2 cup red bell pepper, diced
  • 2 tsp mayonnaise
  • to taste salt and pepper
  • 1 tbsp olive oil
  • 3 slices provolone cheese
  • 1 large flour tortilla (burrito size)

Method
 

Preparation
  1. In a skillet, heat the olive oil over medium heat.
  2. Add the onions, garlic, green bell pepper, red bell pepper, and mushrooms, and sauté until softened.
  3. Push the vegetables to one side of the skillet and add the cheese steak beef. Cook until browned.
  4. Spread mayonnaise over one side of the tortilla.
  5. Place the beef and vegetable mixture on one half of the tortilla and top with provolone cheese.
  6. Fold the tortilla over and cook on a separate skillet until golden brown on both sides and the cheese is melted.
Serving
  1. Serve hot with sour cream, salsa, or guacamole on the side for dipping.

Notes

For creative twists, swap beef with grilled portobello mushrooms or add jalapeños for spice. Ensure your skillet is preheated for perfectly crispy quesadillas.
