Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs, cottage cheese, cheddar cheese, salt, and pepper until well combined.
- Fold in the chopped spinach and bell peppers.
- Grease silicone molds generously and pour in the egg mixture, filling each mold about three-quarters full.
- Place the molds in a baking dish and pour water into the dish halfway up the sides of the molds.
Baking
- Bake for around 25 to 30 minutes, or until the egg bites are set and lightly golden on top.
- Allow them to cool slightly before carefully removing from the molds.
Serving
- Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to four days. They can be frozen for longer storage; reheat in the microwave for about 30 seconds to 1 minute.
