Ingredients
  

Main Ingredients
  • 6 large eggs
  • 1 cup cottage cheese Can be blended for a smoother texture
  • 1 cup cheddar cheese Feel free to substitute with your favorite cheese
  • 1/2 teaspoon salt Adjust according to taste
  • 1/4 teaspoon black pepper Adjust according to taste
Vegetables
  • 1 cup fresh spinach Chopped
  • 1/2 cup bell peppers Chopped, any color

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, cottage cheese, cheddar cheese, salt, and pepper until well combined.
  3. Fold in the chopped spinach and bell peppers.
  4. Grease silicone molds generously and pour in the egg mixture, filling each mold about three-quarters full.
  5. Place the molds in a baking dish and pour water into the dish halfway up the sides of the molds.
Baking
  1. Bake for around 25 to 30 minutes, or until the egg bites are set and lightly golden on top.
  2. Allow them to cool slightly before carefully removing from the molds.
Serving
  1. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to four days. They can be frozen for longer storage; reheat in the microwave for about 30 seconds to 1 minute.
