- In a small bowl, combine warm water, honey, and yeast. Let it sit until frothy, about 5-10 minutes.
- In a large mixing bowl, combine both types of flour, brown sugar, cocoa powder, cornmeal, and kosher salt.
- Add the yeast mixture and canola oil to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, around 1 hour.
- Preheat the oven to 350°F (175°C).
- Punch down the dough, form it into a loaf, and place it in a greased loaf pan.
- Cover and let it rise again until it has doubled, about 30 minutes.
- Bake in the preheated oven for about 30-35 minutes or until golden brown and sounds hollow when tapped.
