  • 1 tablespoon Vegetable oil for frying
  • 1 pound Chicken breast cut into bite-sized pieces
  • 8 ounces Mushrooms sliced
  • 1 medium Bell pepper sliced
  • 1 medium Onion sliced
  • 1 cup Chicken broth to deepen the sauce
  • 2 tablespoons Soy sauce for umami flavor
  • 1 tablespoon Cornstarch for thickening the sauce
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger fresh, minced for flavor
  • 2 tablespoons Green onions for garnish

Method
 

Preparation
  1. In a bowl, mix soy sauce, chicken broth, minced garlic, ginger, and cornstarch. Set aside.
  2. Heat oil in a skillet over medium-high heat. Add the chicken pieces and cook until golden and cooked through, about 5-7 minutes.
Cooking
  1. Remove chicken and set aside. In the same skillet, add the mushrooms, bell peppers, and onion. Stir-fry until tender.
  2. Add the cooked chicken back to the skillet. Toss everything together and pour in the sauce mixture, stirring constantly until the sauce thickens and coats the chicken and vegetables.
  3. Serve with a sprinkle of chopped green onions on top.

Notes

This Mushroom Chicken shines when served over a bed of fluffy steamed rice or alongside noodles. Store leftovers in an airtight container in the fridge for up to 3 days.
