Preparation
- In a bowl, mix soy sauce, chicken broth, minced garlic, ginger, and cornstarch. Set aside.
- Heat oil in a skillet over medium-high heat. Add the chicken pieces and cook until golden and cooked through, about 5-7 minutes.
Cooking
- Remove chicken and set aside. In the same skillet, add the mushrooms, bell peppers, and onion. Stir-fry until tender.
- Add the cooked chicken back to the skillet. Toss everything together and pour in the sauce mixture, stirring constantly until the sauce thickens and coats the chicken and vegetables.
- Serve with a sprinkle of chopped green onions on top.
Notes
This Mushroom Chicken shines when served over a bed of fluffy steamed rice or alongside noodles. Store leftovers in an airtight container in the fridge for up to 3 days.
