  1. Begin by slicing the chicken breast into bite-sized pieces. Season lightly with salt and pepper.
  2. Heat a tablespoon of oil in a large skillet over medium-high heat. Once hot, add the chicken and cook until golden brown, about 5-7 minutes.
  3. Add minced garlic and ginger, stirring continuously for about 30 seconds, until fragrant.
  4. Toss in sliced mushrooms and stir-fry for another 2-3 minutes until they start to soften.
  5. In a separate bowl, mix soy sauce and cornstarch until smooth. Pour this mixture over the chicken and mushrooms, mixing well.
  6. Cook for an additional 3-5 minutes, allowing the sauce to thicken and coat everything evenly.
  7. Serve hot, garnished with chopped green onions.

Notes

For the best flavor, consider marinating the chicken in soy sauce, garlic, and ginger for 30 minutes before cooking. You can also add bell peppers, snap peas, or broccoli for added nutrition and color. For a spicy kick, add red pepper flakes or chili paste. To make it gluten-free, use tamari instead of soy sauce.
