Main Ingredients
  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken for convenience
  • 8 oz cream cheese, softened Ensure it's at room temperature for easier mixing
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can cream of chicken soup
Topping
  • 1 cup crushed Ritz crackers
  • 4 tablespoons melted butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked chicken, cream cheese, cottage cheese, sour cream, diced onion, minced garlic, and cream of chicken soup until well combined.
  3. Pour the mixture into a greased 9×13 inch casserole dish.
  4. In a separate bowl, combine the crushed Ritz crackers with the melted butter, then sprinkle it evenly over the casserole.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until bubbly and golden on top.

Notes

This casserole can be made ahead of time and refrigerated or frozen for later use. Store leftovers in an airtight container for up to 3-4 days.
