  • 1/2 cup Sour cream

  1. In a large bowl, combine the corn (thaw if using frozen), cilantro, lime juice, mayonnaise, chili powder, salt, and pepper.
  2. Mix everything well until the corn is thoroughly coated and the flavors meld.
  3. Serve the mixture in cups or bowls. Top each serving with Cotija cheese and a dollop of sour cream.

Notes
