  • 1 cup cherry tomatoes, halved Use ripe cherry tomatoes for the best flavor.
  • 1 large cucumber, diced Peel if preferred.
  • 1 large bell pepper, diced Any color will work.
  • 1 large red onion, thinly sliced Soaking in cold water for a few minutes softens the flavor.
  • 1 medium carrot, grated Adds sweetness and color.
Marinade
  • 1/4 cup olive oil Extra virgin olive oil is recommended.
  • 2 tablespoons apple cider vinegar Provides a tangy flavor.
  • 1 teaspoon dried oregano Fresh oregano can be used for a more vibrant taste.
  • to taste Salt Adjust according to preference.
  • to taste Pepper Freshly ground black pepper is best.

Method
 

Preparation
  1. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and carrot.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the vegetables and toss to coat.
  4. Allow the salad to marinate for at least 10 minutes before serving.

Notes

Best served fresh, but can be made ahead of time to enhance flavors. Store leftovers in an airtight container for up to 2-3 days.
