For the dressing
  • 1/3 cup orange marmalade
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 cup white vinegar
  • 2/3 cup vegetable oil
  • 2 tablespoons soy sauce
  • 3 tablespoons sesame oil
  • 2 tablespoons honey
  • 1/4 cup chopped mandarin orange segments Add at the end of dressing preparation

  • 8 cups lettuce mix
  • 4 pieces grilled chicken breasts, sliced

Preparation
  1. Begin by making the dressing. In a blender, combine all the dressing ingredients except for the orange segments. Blend on medium speed for 30 to 45 seconds until smooth.
  2. Transfer the dressing to a small bowl, add the chopped orange segments and stir well.
  3. Cover the dressing and refrigerate it for up to three days to allow the flavors to meld.
  4. Serve the dressing over a bed of mixed greens topped with sliced grilled chicken breast.
Serving
  1. Start by placing a generous handful of your lettuce mix on each plate.
  2. Artfully arrange the grilled chicken slices and drizzle the dressing over the salad.
  3. Optionally, top the salad with almonds or sesame seeds for added texture.

Notes

For best results, grill the chicken ahead of time and keep it in the refrigerator. Consider doubling the dressing recipe for gatherings.
