  • 6 large Eggs Can be substituted with tofu or chickpea flour mixture for egg-free version.
  • 1/4 cup Onions Chopped.
  • 1/4 cup Milk Can be substituted with a non-dairy milk.
  • 1 cup Cheddar cheese Can substitute with different cheese varieties.
For cooking
  • 1 tbsp Olive oil
  • 4 tbsp Unsalted butter Divided use.
  • 2 tbsp Chives Chopped, for garnish and egg mixture.

Method
 

Preparation
  1. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  2. Add the onions and hash browns, cooking until the hash browns are crispy and golden, approximately 10 minutes.
  3. In a bowl, whisk together the eggs, milk, and chopped chives, seasoning with salt and pepper to taste.
Cooking
  1. Once the hash browns are ready, push them to one side of the skillet, and add the remaining butter to the empty space.
  2. Pour the egg mixture into the skillet, scrambling the eggs until fully cooked.
  3. Sprinkle the cheddar cheese over the hash browns and cover the skillet briefly until the cheese melts.
  4. Serve immediately for a warm and savory breakfast.

Notes

For extra flavor, garnish with fresh herbs like parsley or extra chives. Serve with crispy toast or fresh fruit. For leftovers, cool completely before storing in an airtight container; lasts up to 3 days in the fridge. Reheat in the oven for best texture.
