  • 1 cup Fresh basil leaves, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 4 cups Mixed greens (like arugula, spinach, or romaine)
Dressing ingredients
  • 1/4 cup Olive oil
  • 2 tablespoons Fresh lemon juice

Preparation
  1. If you haven’t done so already, grill or bake your chicken breast until fully cooked. Allow it to cool before dicing it into bite-sized pieces.
  2. In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and pepper. Adjust the seasoning to taste.
Combining
  1. In a large bowl, add the mixed greens, diced cucumber, cherry tomatoes, and basil. Toss them gently to mix.
  2. Fold in the diced chicken to the salad mixture.
  3. Drizzle your lemon dressing over the salad and toss well until everything is evenly coated.
