Ingredients
  

Vegetables
  • 1 small head green cabbage Finely shredded
  • 1 small head purple cabbage Finely shredded
  • 2 large carrots Finely shredded
Dressing
  • 1/2 cup mayonnaise Can be replaced with vegan mayonnaise
  • 1/4 cup buttermilk Can be substituted with yogurt
  • 1 tablespoon white vinegar Adjust for tangier flavor
  • 1 tablespoon lemon juice Adjust for tangier flavor
  • 1/4 cup sugar
  • Salt and pepper To taste

Method
 

Preparation
  1. Finely shred the green and purple cabbages as well as the carrots.
  2. In a large bowl, mix the shredded cabbages and carrots together.
  3. In a separate bowl, combine the mayonnaise, buttermilk, white vinegar, lemon juice, sugar, salt, and pepper. Whisk until well combined.
  4. Pour the dressing over the cabbage mixture and toss to coat thoroughly.
  5. Cover and refrigerate for at least 2 hours before serving to enhance the flavors.

Notes

For extra crunch, add chopped celery or apple slices just before serving. Avoid freezing the coleslaw for optimal texture.
