Ingredients
  

For the Cookies
  • 1 cup Rolled oats Old-fashioned rolled oats recommended
  • 1 cup All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 1/2 cup Unsalted butter Softened
  • 1/2 cup Brown sugar Packed
  • 1/2 cup Granulated sugar
  • 1 large Eggs
  • 1 tsp Vanilla extract
For the Filling
  • 1 cup Heavy cream
  • 1/2 cup Powdered sugar Adjust to taste
  • 1 tsp Vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix rolled oats, flour, baking soda, and cinnamon; set aside.
  3. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Gradually mix the dry ingredients into the wet mixture until well combined.
  6. Drop tablespoons of the cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until golden brown. Remove from the oven and let cool on a wire rack.
Make the Filling
  1. For the filling, beat heavy cream until soft peaks form, then add powdered sugar and vanilla, mixing until thick and fluffy.
Assemble
  1. Spread a generous amount of filling between two cooled cookies to form a sandwich.

Notes

Store leftover pies in an airtight container at room temperature for up to three days or freeze for later use. When ready to enjoy, thaw at room temperature.
