Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix rolled oats, flour, baking soda, and cinnamon; set aside.
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Gradually mix the dry ingredients into the wet mixture until well combined.
- Drop tablespoons of the cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until golden brown. Remove from the oven and let cool on a wire rack.
Make the Filling
- For the filling, beat heavy cream until soft peaks form, then add powdered sugar and vanilla, mixing until thick and fluffy.
Assemble
- Spread a generous amount of filling between two cooled cookies to form a sandwich.
