  • 8 oz pasta (penne or rotini)
  • 1/2 cup salami, diced
  • 1/2 cup ham, diced
  • 1/2 cup turkey or roast beef, diced
  • 1 cup provolone cheese, cubed
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Begin by cooking the pasta according to the package instructions until al dente.
  2. Once done, drain the pasta and allow it to cool.
  3. In a large mixing bowl, combine the cooked pasta with the diced salami, ham, turkey, provolone cheese, cherry tomatoes, cucumber, red onion, and black olives.
  4. Pour the Italian dressing over the mixture and toss everything together until well-coated.
  5. Season to taste with salt and pepper.
  6. Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld beautifully.
  7. When ready to serve, garnish with fresh parsley if desired.

Notes

Serve cold, pairs well with grilled meats, or can be enjoyed as a light meal. Store leftovers in an airtight container in the refrigerator for 3 to 5 days. For a vegetarian option, replace the meats with more vegetables or chickpeas.
