  • 2 cups short pasta (like rotini or fusilli) Opt for a shape that holds dressing well.
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 small red onion, finely chopped
  • 1/2 cup olives (black or green)
Meats and Cheese
  • 1 cup deli meats (like salami or turkey)
  • 1 cup provolone cheese, cubed
Dressing
  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1 tablespoon Italian seasoning

Preparation
  1. Boil your pasta according to package instructions. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooked pasta, halved cherry tomatoes, diced bell peppers, chopped red onion, and olives.
  3. Add the cubed deli meats and provolone cheese to the bowl.
  4. In a separate bowl, whisk together olive oil, vinegar, and Italian seasoning to create the salad dressing.
  5. Pour the dressing over the salad mixture and toss to coat everything evenly.
  6. Let sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
