Preparation
- Marinate the chicken breasts in a mixture of olive oil, lime juice, minced garlic, cumin, salt, and pepper for at least 30 minutes.
- Preheat your grill to medium-high heat.
Grilling
- Place the marinated chicken onto the grill and cook for 6 to 7 minutes on each side until the internal temperature reaches 165°F (75°C).
- In the last few minutes of grilling, add cheese on top of the chicken and close the grill lid to melt the cheese.
Serving
- Serve the chicken warm, topped with fresh pico de gallo.
Notes
Consider serving with fluffy rice, crispy tortilla chips, a side salad, grilled vegetables, or guacamole. Don't forget a wedge of lime for an extra kick!
