Ingredients
  

For the chicken
  • 4 pieces Chicken breasts
  • 1 cup Cheese (cheddar or Monterey Jack) Can experiment with different cheese varieties
For the marinade
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice Freshly squeezed for best flavor
  • 2 cloves Garlic (minced)
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the pico de gallo
  • 2 cups Fresh pico de gallo Can substitute with fresh salsa or diced tomatoes

Method
 

Preparation
  1. Marinate the chicken breasts in a mixture of olive oil, lime juice, minced garlic, cumin, salt, and pepper for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
Grilling
  1. Place the marinated chicken onto the grill and cook for 6 to 7 minutes on each side until the internal temperature reaches 165°F (75°C).
  2. In the last few minutes of grilling, add cheese on top of the chicken and close the grill lid to melt the cheese.
Serving
  1. Serve the chicken warm, topped with fresh pico de gallo.

Notes

Consider serving with fluffy rice, crispy tortilla chips, a side salad, grilled vegetables, or guacamole. Don't forget a wedge of lime for an extra kick!
