  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 ea egg
  • 2 teaspoons vanilla extract
  • cups all-purpose flour
  • ½ cup cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup milk
  • 1 ea egg yolk
  • 1 cup sweetened coconut flakes
  • ½ cup chopped pecans
  • ¼ cup chocolate chips (melted for drizzle)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in one egg and vanilla extract until well combined.
  4. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Fold in the coconut flakes, chopped pecans, and a splash of milk.
  7. Drop tablespoons of dough onto a prepared baking sheet.
  8. Bake for 10-12 minutes until set.
  9. While the cookies cool, melt the remaining chocolate chips and combine with butter, additional brown sugar, and milk to create a frosting.
  10. Once cooled, drizzle this frosting over the cookies.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months. Use room temperature ingredients for best results.
