- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sliced zucchini, olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss well until the zucchini is evenly coated.
- Spread the coated zucchini in a single layer on a baking sheet lined with parchment paper.
- Sprinkle the grated Parmesan cheese generously over the zucchini slices.
Cooking
- Roast in the preheated oven for about 20-25 minutes or until the zucchini is tender and the cheese is golden brown.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
These slices pair well with grilled chicken or fish, and can also be served cold in salads. To store leftovers, place cooled slices in an airtight container; they will keep well in the refrigerator for up to three days.
