  • 4 pieces boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 3 pieces carrots, sliced Can be swapped for another vegetable.
  • 1/2 cup garlic butter Can substitute with regular butter or olive oil.
  • 1 cup chicken broth
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional) Use for garnish.

Method
 

Preparation
  1. Start by placing the diced potatoes and sliced carrots at the bottom of your crockpot.
  2. Season the chicken breasts with garlic powder, salt, and black pepper. Lay them on top of the veggies.
  3. Pour the chicken broth and melted garlic butter over the chicken and vegetables, ensuring everything is slightly submerged.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours until the chicken is cooked through and the vegetables are tender.
  2. Once cooked, shred the chicken for easier serving and give everything a good stir. Sprinkle with fresh parsley if desired.

Notes

Leftovers can be stored in an airtight container for up to three days in the refrigerator or frozen for up to three months. Thaw before reheating.
