Preparation
- In a small bowl, combine the mayonnaise, yogurt, and chipotle peppers. Mix well to create a smooth chipotle mayo.
- Lay out four slices of bread on a work surface. Place one slice of mozzarella cheese on each.
- Top the mozzarella with 1/2 cup of shredded chicken, followed by two slices of tomato, three rings of red onion, and a sprinkle of fresh basil.
- Spread 1 1/2 tablespoons of the chipotle mayo mixture on each of the remaining four bread slices. Place these slices on top of the sandwiches, mayo-sides down.
- Press down firmly on the sandwiches, then lightly coat both sides with cooking spray.
Cooking
- Heat a griddle, grill pan, or skillet over medium heat. If cooking more than one sandwich, work in batches.
- Place the sandwiches onto the heated griddle or pan. Top with a heavy saucepan to create weight and help them toast evenly.
- Cook until the bottoms are golden brown, about 2 minutes. Carefully flip the sandwiches and cook the other side for about 2 more minutes, ensuring both sides are crisp and toasted.
Notes
Best served fresh off the grill. Wrap leftovers individually in plastic wrap or store in an airtight container for up to 3 days. Freeze unassembled ingredients separately for longer storage.
