  • 4 slices bread Any type of bread, such as white, whole-grain, or brioche.
  • 2 pieces eggs
  • 1 cup milk For a creamier texture, use whole milk or add a splash of heavy cream.
  • 1 teaspoon vanilla extract Can be swapped for almond extract for a different flavor.
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon Other spices such as nutmeg or pumpkin spice can be added for a seasonal twist.
  • Butter or cooking spray for greasing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with butter or cooking spray.
  2. Cut the bread into cubes and place them into the muffin cups.
  3. In a mixing bowl, whisk together the eggs, milk, vanilla extract, sugar, and cinnamon until well combined.
  4. Pour the egg mixture over the bread cubes in the muffin tin, pressing down lightly to soak the bread.
Baking
  1. Bake for 15-20 minutes or until the cups are golden brown and puffed.
  2. Allow to cool slightly before removing from the muffin tin. Serve warm.

Notes

These cups can be served with fresh berries, whipped cream, or maple syrup. They are also great with a side of breakfast sausage or fruit salad. Store any leftovers in an airtight container in the refrigerator. They can be reheated in the microwave or oven.
