Main Ingredients
  • 1.50 lb Chicken Cooked in broth for flavor
  • 1/2 piece Apple (diced) Any variety works
  • 2 tbsp Celery (chopped)
  • 3/4 cup Grape (halved)
  • 32 oz Chicken broth (for cooking) Use low-sodium if preferred
  • 3/4 cup Mayonnaise Can substitute with Greek yogurt for a lighter version
  • 2 tsp Dressing (your choice) Add more for extra flavor
  • 1/2 tsp Black pepper
  • 1/2 tsp Salt
  • 1/2 cup Pecan (chopped) Can substitute with walnuts if preferred

Preparation
  1. Start by cooking the chicken in a pot of chicken broth over medium heat until fully cooked, about 15-20 minutes.
  2. Once the chicken is cooked through, allow it to cool, then chop it into bite-sized pieces.
  3. In a large bowl, combine the cooked chicken, diced apple, chopped celery, halved grapes, and chopped pecans.
  4. Add mayonnaise, your chosen dressing, black pepper, and salt to the mixture.
  5. Mix well until all the ingredients are evenly coated with the dressing.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.
  7. Serve the salad on a bed of greens, in a sandwich, or however you'd like!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. If making ahead of time, it tastes even better the next day. Freeze in smaller portions if desired, and thaw overnight in the refrigerator.
