Preparation
- Start by cooking the chicken in a pot of chicken broth over medium heat until fully cooked, about 15-20 minutes.
- Once the chicken is cooked through, allow it to cool, then chop it into bite-sized pieces.
- In a large bowl, combine the cooked chicken, diced apple, chopped celery, halved grapes, and chopped pecans.
- Add mayonnaise, your chosen dressing, black pepper, and salt to the mixture.
- Mix well until all the ingredients are evenly coated with the dressing.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Serve the salad on a bed of greens, in a sandwich, or however you'd like!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. If making ahead of time, it tastes even better the next day. Freeze in smaller portions if desired, and thaw overnight in the refrigerator.
