  • 2 cups cooked chicken breast, shredded Use leftover rotisserie or poached chicken for best flavor.
  • 2 tablespoons celery, finely minced Adds crunch.
  • 2/3 cup Dukes mayonnaise Feel free to substitute with a preferred brand.
  • 1/8 teaspoon onion powder For flavor.
  • 1/2 Fiji apple diced Adds sweetness.
  • 1/4 cup grapes, diced For sweetness and juiciness.
  • 1 tablespoon pecans, chopped Adds crunch.

Method
 

Preparation
  1. Shred the chicken into bite-sized pieces using a food processor, stand mixer, or by hand.
  2. Finely mince the celery.
  3. In a medium bowl, mix the shredded chicken, mayonnaise, and onion powder until well combined.
  4. Toss in the minced celery, diced apple, grapes, and chopped pecans. Stir until everything is evenly coated and combined.
  5. Serve on bread, crackers, or atop a fresh salad.

Notes

For best flavor, use leftover rotisserie chicken. Prepare larger batches for quick lunches throughout the week. Store leftovers in an airtight container for up to three days or freeze without fruits and nuts.
