  • 4 pieces egg whites
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup chopped veggies (such as spinach, bell peppers, or onions) Feel free to mix and match based on preferences.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the egg whites, cottage cheese, salt, pepper, and any optional spices you're using.
  3. Stir in the chopped veggies and shredded cheese until well mixed.
  4. Grease a muffin tin and pour the egg mixture into the cups, filling them about 3/4 full.
Baking
  1. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  2. Allow to cool slightly before removing from the muffin tin.
  3. Serve warm or store in the refrigerator for meal prep.

Notes

To keep your egg white bites fresh, store them in an airtight container in the refrigerator for up to 5 days. They can also be frozen for longer storage. Add herbs or different cheeses for unique flavors.
