Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the egg whites, cottage cheese, salt, pepper, and any optional spices you're using.
- Stir in the chopped veggies and shredded cheese until well mixed.
- Grease a muffin tin and pour the egg mixture into the cups, filling them about 3/4 full.
Baking
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin.
- Serve warm or store in the refrigerator for meal prep.
Notes
To keep your egg white bites fresh, store them in an airtight container in the refrigerator for up to 5 days. They can also be frozen for longer storage. Add herbs or different cheeses for unique flavors.
