Preparation
- Preheat your oven to 300°F (150°C).
- Lightly coat a muffin tin with avocado oil spray to prevent sticking.
- In a mixing bowl, whisk together the egg whites, cottage cheese, mozzarella cheese, chopped bell pepper, spinach, salt, and water.
- Mix until everything is well combined and smooth.
- Carefully pour the mixture into the muffin tin cups, filling each about three-quarters full.
- Bake for 20-25 minutes, or until the egg bites are firm and puffed up slightly.
- Allow them to cool for a few minutes before carefully removing them from the muffin tin.
- Serve warm, or store in the refrigerator for a convenient snack later!
