  • 1 small Bell pepper, finely chopped
  • 1/2 cup Spinach, chopped
  • 1/2 cup Egg whites
  • 1 pinch Salt
  • 1/3 cup Cottage cheese
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup Water
  • 1 spray Avocado oil spray To coat the muffin tin

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Lightly coat a muffin tin with avocado oil spray to prevent sticking.
  3. In a mixing bowl, whisk together the egg whites, cottage cheese, mozzarella cheese, chopped bell pepper, spinach, salt, and water.
  4. Mix until everything is well combined and smooth.
  5. Carefully pour the mixture into the muffin tin cups, filling each about three-quarters full.
  6. Bake for 20-25 minutes, or until the egg bites are firm and puffed up slightly.
  7. Allow them to cool for a few minutes before carefully removing them from the muffin tin.
  8. Serve warm, or store in the refrigerator for a convenient snack later!

Notes

These Egg White Bites are customizable; consider adding different cheeses or vegetables to suit your taste. Store leftovers in an airtight container for up to four days in the fridge or freeze for up to two months.
